If you are not racing pick a hull that looks cool to you and build it. "bad handling" is a relative term. Any of the longer offshore cats won't turn like the shorter sprint cat. They will be faster though.
What kv 1515's do you have. Those should make plenty of power though prop size may be an issue.
If you have everything already, get a hull $250-400 and drives $40-$100 rudder $50 and go run.Comment

Mhz is good, they make great hulls and hardware, though they will cost more. Seems to be a bit cheaper to go direct from germany.Comment

What hull/hardware are you thinking? That's exactly what I want to do. Get a hull, put it together and go RUN IT!
(I've already spent way toooooo much time on the forum and not enough time outside today!)

Not to sound too stupid, but seriously, pick any 40-50" hull get a pair of speedmaster drives and rudder and go. I would say 4-5s with those motors would be a decent running boat. I would think 45-55mph is do-able then later get bigger motors if you want to hit 65-70. 10-15min runs are possible but you might sacrifice speed for the extra batteries you would carry. Arrow Shark 53" would not be too bad and looks decent too. I think a few of the aeromarine hulls would be fine. Just pick one you like in that size, they will all run good once you get your setup right.
At this stage just pick the boat YOU like, then you can get the guys here to give you tips on how to make it run good. I realize you want to make an educated decision, thats good, and every boat mentioned by everyone so far would work for your purpose.
My hulls, right now, are too big or too small for your use so I could not recommend them. We should have a middle size soon....Comment

Ideally, I'd like to find a pre-painted hull/hardware kit, drop in my electronics and go. Buying drive hardware retail a la carte is a greuling process prone to error and very unappealing to me. I want a complete hardware kit, sized for the hull in mind.
I sent off messages to Mhz, Arrow & Aero asking if they have a dual electric motor hardware kit for their hulls... We'll see what they have to say.
If I have to spend two grand, I will, but won't be happy about it. If I can keep this under a grand, it's a success. If I can keep it under $500, Yeah-buddy, we have a winnner.
As for the MPH, I really have no idea. I've never put the GPS on my boats. They are just for fun. I can say the stock EKOS was the fastest and plenty fast for the area I run in. 40MPH would probably be more than adequate. I can adjust the batteries/prop to help the run time as needed.
