While Im probably the least knowledgable guy here when it comes to mono, I'd still offer my advice to erase what you've done and go back to the basics. Monos are pretty picky in setting up but very stable when you get it dialed in.
First check CG. At a total length of 32", cg should be at 9.5" measured from transom. Thats about 30%, so try to stay within the 9.5"
Get a 12" metal ruler, turn the boat over and check for hooks - if there is, even them with bondo. Bring your stinger back to neutral.
Using your turnigy esc program card, lower the esc failsafe protection to 3.2v but do watch your run time. Some have opted to "no protection" but if you extend your runtime your batts may bloat.
Speaking of batteries, are they new or old? Are you constantly cycling them? There have been cases where LiPos sleep, so whether you get to use them or not, storage charge (cycle) all batts. I know its a pain to storage charge a full charge batt, but it will prolong its life.
In the hobby of electrics, one of your biggest investment should be a good battery charger - your batts are the life of your electrics so its paramount to properly maintain batteries.
