Now it gets complicated.....what batteries....size and quality of motor....prop (must be balanced and sharpened)...what hardware etc....is the drivetrain free spinning. Can you contact the previous owner as I presume this is a used boat and ask him/her what they ran.
The batteries I have are Turnigy 5000 mah 30C 2 cells as well as 2 Turnigy 5000 mah 4 cells if I can use them. I'm picking the boat up tomorrow after work hopefully so I will be able to talk to the previous owner then. It looks like it has fine design harware.

If the batteries are identical in all specs you can run 1 2S and 1 4S in series which would be great on a 580L motor or 2 4S in series which would be a very fast hull......25,000 to 29,000 RPM max for a fast sport boat dependant on prop choice.

Jump. Whatever you do do not use the 7XL, you will eventually melt your ESC and overheat the motor and packs. And do not get a Neu 1515/1Y with 2200 Kv! That large hull is marginal on 4S but doable with the correct setup. 'Cheap' is you enemy here, be careful. Spend too little and you will not enjoy the FE experience. No one likes poor reliability and burned components.
Get a 10XL Feigao and the highest-rated ESC you can afford. With an x445 and good packs you should be able to get around 35-40 mph when set up correctly, maybe a bit more. The Drifters are pretty light with plenty of lift and IME run pretty well - they don't need a whole lot of power for their size as long as they aren't too heavy.
For the 6S option choose a large format (XL-size minimum) motor with a Kv of 1100-1300, NO HIGHER! More voltage means lower amp draw and longer run times for the same output.

As I stated the batteries must be identical in all specs..same manufacturer..same product etc. the end RPM is related to the Kv of the motor ie a 2000Kv motor with 6S power equals 42,000 RPM!!!! and BOOM

Ok, that last part made me chuckle out loud! lol. I'm familiar with the KV ratings from my trucks and Heli so I guess I just have to decide wethter I am going to run 4 cell or 6 cell configuration. The only difference between the 4 cell and the 2 cells is the 2 cells are hardcase

Turbonutt forget all your truck and heli experience, boats are amp/voltage hogs, they run at maximum specs most of the time and at stall or initial takeoff the amps are huge, and the ESC is the weakest link.

I have a Maritimo wich is very similar to yours. Tried a 580 8L on 5-6s no good. The final setup is motor HPI torK 2200 kv (search e-bay) with custom cooling jacket with 4-5s, 440-642 prop with Turnigy 180A. The motor is 4 pole and similar or maybe the same with the mamba 2200, cost around 120-150$, you won't be dissapointed for sure, plenty of power. But you must take out the fins and make a cooling jacket or go for a mamba with the cooling jacket from OSE. On 4s with a 642-445 over 45 mph. I was surprised how well the Maritimo goes and accelerates with a 440 prop, I believe the Drifter does the same but not sure. In case it doesn't and you need over 45mm prop then you need anoter motor too
So I can't do the 6 cell set up as my 4 cells are 25C and my 2 cells are 30C. Now going with the whole higher voltage = lower amps could I run both me 4 cells in a 8s2p set up with the Turnigy 80amp HV esc and say a 1100KV XL motor? Would the 80 amp esc be enough? Or am I way out to lunch?
