Others can correct me if im wrong, but i think the 7xl's will need larger esc's , as thats a pretty hot set up, depending on props and weight.

Honestly my next will be smaller, but I would bet that twin Proboat motors with 100-120 amp ESCs on 5-6S each motor with X442 props would make you more than grin wildly.

It all comes down to how fast do you need to go. I would place the expense to speed ratio on a logarithmic scale, where I am stopping at the part where it gets really steep - about 45mph.

What plans are you building from?

              debatable.

If you want to go 6S, you might be better off with Himodel 200A that can handle 8S, nice to have the cushion. (this is a $100 motor/esc set up!!)

For what it is worth, my twin Jolly ( 33 inches long) has recorded 54 mph on twin Ammo 2300 motors with X-Power 100 ESCs on 4S each.
According to my Eagle Tree the averages amps are only 65 to each motor using Octura X442 props, so nothing is highly stressed.
With twin motors and props the current draw is much less to each motor compared to the same combination as a single.
I guess it comes down to how fast you want to go and how deep your pockets are.
I would go with your original suggestion but use the Ammo 2300 motors instead of the Feigao 7Xls.

Impossible to predict as there are too many variables between hulls, but should be similar to my Jolly if the tunnel and sponson shape is similar.
A few more inches of hull length wont make much difference if you can get the hull to plane with just the last few inches of each sponson in the water, and within reason hull weight just affects acceleration, not top speed.
