I know you said that you did not wanted to take the rudder off (no ripping needed

but my suggestion is, place the rudder offset to the left (you have the holes done) and the strut in the center or even a bit to the right to counter for prop walk. The problem with offsetting the strut to the right is that I would not be able to help you as far as how much off center...
someone else would have to chime in with the math to that.
There are issues if you leave the rudder center with the prop (regardless if in front or behind), not only a bitch to get the flex lubed...
Having the strut inside the hull is something tricky to have... avoiding water inside will be key for that kinda system... not impossible but it'll take some tweaking.
Have you decided on the powerplant yet?
