I have run one of my SV27s stock with a CF48 prop on 4s to 43mph, and it handled fairly well, not so loose, and takes the corners well.

I took a Pmono championship with my SV27 running against Brian Buaas' and Greg Schweers' 33" DF Pmonos in our club. It was very difficult getting consistent results, but I learned alot about driving. I ran a GPS in that boat nearly every race and clocked consistently in the 52's.
I am one that many do not believe when I claim that, but I have plenty of witnesses to back it up. I even won a heat of Pmono @ the Nats that year with my SV (my avatar is the boat crossing the line in first as it wrecked!). But flipped most others.
So yeah, it's possible to beat DF's, but my attendance probably won me the championship in the end. Had some great races with Greg and Darin. Brian usually beat me, but second to Brian is a victory in our club.
Good starts really helped out IME, because the race water is usually what gets the SV unstable and on its top even when it is setup well. Then you have to really pedal the boat...rarely full throttle unless conditions warrant it.
A SAW run is a whole 'nother deal though. I'm sure my top speeds were just peaks. Admittedly would be difficult to do a whole SAW run at that speed...

              oooh no...Not stock.
              Ammo 2300kv
              Castle Barracuda 125
              nicely worked prop(s) - 437/3

Mostly stock otherwise that I can remember.
two turn fins, the right-side one is large and CF.
It's a shelf-queen now, but still has most of the running gear in it except ESC and prop. I don't have a class to race the Ammo in, so it stays on the shelf in the boat.
Our club runs Spec-SV as a class, but I have another totally stock SV for that class.

FWIW - I now have a 33" Pmono...much less stress on the driver in race water.

                    Triton hull (I think it's actually 31.75")
                    1521 1.5D
Same ESC that was in the SV - Barracuda 125, but I have a HV180 that I'll use this year so I can have a little more room to prop up.
...and twice as much battery capacity.
                    Here it is:
