Can you put the boat on the table and show where the bottom of the strut is in relation to the bottom of the ride pads

When I move the strut up about 3 mm the MG slower so I dropped it back down and changed the prop to a X442

When the strut is level with the sponson's,
Where are your lipo packs setting in the hull ?
Can you post some pictures of the inside setup when ready to run ?

Also you may lose your prop with that bullet prop nut you have on there,
They look cool but not when the prop go's to the bottom of the lake.
You would be better off with a nylock nut or a standard nut with a piece cooling line behind it.

I've never lost a prop with a bullet nut. I dunno where people are going wrong with them "shrug"
The strut is too low. It should be at very least level with the sponsons if not higher. Once you get that 1515, the boat will handle like rubbish the way you have it. Sure it may be ok now, but it's not moving all that quick. Once you get up to 50 it's really gonna be a pain to keep on the water.
