Reasoning behind my picks. Since the sirius is a bigger dia. motor, you would have more torque. It's not the fastest rpm, but since you would have more torque. You could prop up and go just as fast as the Leo 1730kv, maybe faster. But since its lower rpm, its way more reilable.
I put the TP motor in second. I just think they are a better built than the Leo's are.

You could go with the sf200a esc for up to 8s, I wasn't sure if you had 4s packs laying around which would make it easy to just put them in series. If not go with a turnigy 180 esc, leopard 4082 1600kv and an m445 prop. You'll have a boat that runs cool and is easy to tune as you hone your skills. Best to stick with lower kv motors for now plus you're granted a slightly larger margin for error with things because you won't be spinning things as fast.
@Lenny- Curious what KV is your genesis? Looks to be a fun boat. I love my fast boats but this looks like a great cruiser and like Rum said you don't have to swim after it all the time.Comment

Setup is neu 1515 1y 2200kv sk 180a esc 187 flex x442 on two 4s 30c 5000mah packs in parallel,
Also it has a nice fine design strut with offset rudder and handles great and straight with it.
That is a lot of torque for the daytona hull,
The daytona is 37" L x 9 1/4" W x 4 1/2" H hull.
And the fantasm is 41.3" L x 11.81" W x 5.70"H hull.
Here is my suggestion, trust me there is a lot more guys out there with a lot more knowledge than I do. But here's my suggestions, and I just figured your going with the 8s 200a esc from Kieth Bradley. And I take it your wanting to run 2- 5s packs. But I would run them in parallel, so your running 5s2p. And if your getting the esc from KBB, just pick up a set of his parallel connectors. And I'll start out with my first suggestion, all rpm is unloaded rpm
