    Just thinking out loud...

Having the boat "for about a year" tells us nothing, how many runs has it had? How long do you run each time? How many mAh do you put back in the packs? What is the brand, model and mAh rating of the packs? What were the average temps on the ESC and motor after each run? When was the last time the ESC or packs got wet?

It can't be hitting the LVC since he turned it off. It sounds more like a thermal shutdown, 125*F on the packs after a few seconds of running is not right. Damage to ESCs can be cumulative, a little at a time until failure. The setup is a hot one to start with, you could have eventually fried the ESC. Something is stressing the setup badly, but it is tough to tell without replacing the packs and ESC. The next time you run it, try an m445 prop.
