Looks like my ESC's BEC might have crapped out after the first 2 runs.
I just took it for a run with a seperate rx pack and guess what...
Problem solved, no pulsing at full throttle..looks like it was my receiver cutting in and out.
I have a Turnigy SBEC i can put on and leave the ESC one disabled.
Or i could try getting in touch with the shop and see if there's any kind of warranty.

Unfortunately I've found the BEC's on these ESC's to be very weak and problematic. The Turnigy/Seaking's and the HiModel ESC's BEC's have almost all failed on me. I've even had one burn up an ESC sitting on the bench. They also produce quite a bit of heat in the ESC, so is better to run w/external BEC.
It's quite common to use an SBEC, UBEC or Rx Pack in FE boats. I now add one in to every project as a preventative measure.
On a side note, it's not uncommon for larger servo's to draw 5-7 amps, which the BEC is only rated at 3a. I've been quite surprised with how much load on the rudder the servo has to fight and wouldn't be surprised if the BEC was simply overdrawn.

I've personally had good luck with the Seaking/Turnigy 180a ESC's as well as the Hydra 240's. I use both with an external BEC. I use the Turnigy SBEC's, good to 40v input and 5a output. They are not waterproof, so I use a conformal coating on them to make them waterproof. Alternatively they can be sealed with silicone easily.
There are a few motor/ESC combinations members here have tried with success.. I'm sure they will chime in shortly.

Awaiting my Genesis to come in, in the next week or so as well, and was wondering from the guys who have it already. How many cells can the stock esc handle?
HK Genesis, DF Vortex, Baja 5T, Lazer ZX-5 sp, XXX, 8T, P51-D Mustang Shangrila, GP Giant P51-D Mustang, Blade 400 3D, with way too many more to list.

My stock esc died after 3 runs and that was just on a single 3s lipo. I would get rid of the stock esc and replace it with a 120-180amp.

Drop the stock electrics asap. Run a turnigy/seaking 180 and you will be much happier and swap motors out.
The 180 should be more than enough,,i havent gotten to get mine wet for awile but cant resist, i took a few pics last time out and thought they were nice,,,
