the trim tabs arent to small, the ones you have linked above are too big. The ones i linked are the right size.
And you will be needing trim tabs.
Turn fins are going to be needed most deffinatly.
Your esc and motor combo seem fine to me.
Not 100% sure on it though. Someone else will chime in

nope not yet i have to get it in the water before i even want to touch those lol how high u think i should raise them

move the notch out on the prop shaft, move your drive dog down so there arent as many threads hanging out.

probably gonna need to trim up the flex cable to get it to slide forward
