No one can really help the OP without more information.
- what is the Kv of the motors?
- is it 8S or 12S? You can’t have both.
- what is ?a good speed??
- what kind of run time will you expect?
- why do you need armored packs?
- what is your battery budget?

There are a couple good brands for boating needs.
If you are running 2P per motor the HobbyKing Graphenes are hard to beat for performance and value. The solder tabs are the weak point in these batteries so paralleling them reduces the current draw per pack. You can use two 3000mAh packs in parallel to get 6000mAh. Their chemistry is very stable and I have not seen much degradation over time.
If you are running 1P I would recommend the RoaringTop 80C cells or Dinogy Graphene 2.0 70C cells. Both these companies are run my model boaters and the cells have good construction and chemistry.
Since you are running a twin cat you cannot likely fit 2P of cells per motor are the higher cell counts so the RT's or Dinogy's would be my recommendation.Tyler Garrard
