Where did you get the rudder and may I ask what the total height of the rudder & mount is please?

Place a strait edge length ways on the sponson, look at it from the side. If the rear step doesn't match the front two it needs to be done, you basicly make the rear step match the front two.

could i use carbon plate and shape it to it and epoxy it on?

Yes, CF would work fine. I used a piece of G-10 when I did mine.
