Again, Wow! what a cool project!
As for speed... are you looking for scale realism or do you wanna see how fast you can make her go? Why not do a solid shaft drive for extra realism?
If it were me, I’d probably be looking for 30-40mph max. And if you ran proposed set up on 4S you could see these speeds. You will probably need a 40-42 mm prop and in that case I’d be looking at a 120-150 amp esc just to be safe.
How much does she weigh?
How deep are the sponsons? I would be ready to add ride pads to deepen the tunnel.
Is the tunnel flat or steeper toward the bow?

I'm glad that ship comes back to life.
In my 1/10 boat of 920mm length. I used a 1500kv 4082 motor, a 150A esc and 6S lipos. It is a heavy ship,
Use a 6S 1P (3s + 3s series), 5A, 45C Gens Ace configuration.
RTR weight 4750grs
1500kv XK 4082 old Hobby series motor
150A Flycolor ESC.
External 6V BEC and an economical waterproof servo.
HobbyKing 43MM propeller, also old.
Diameter: 43mm
Step ratio: 1.6
Number of blades: 2 Shaft size
: 4.76 mm
4.76mm flexible shaft with Teflon tube. Slightly curved
The following test is carried out with a measured value X442. And maybe try 6S 2P setup.

hi, it weighs ....1.5kg.........with no, motor...esc...battery..steering servo.....
sponsons are 13mm iv added a few pics so you can see .......iv fitted a flexi shaft today and the rudder do these look ok? iv ordered a 3670 2200kv motor rather than the 3660 as it will be here in a couple of days....where does the point of balance need to be?20200704_024532.jpg20200704_025207.jpg20200704_025239.jpg

If it were me, I’d add up to 10mm to sponsons and look to balance 1-2 cm behind sponsons."Look good doin' it"

I have mine balanced at 30mm behind the heel of the sponsons. Bear in mind that the original boat was a straight line speed runner, not an oval racer. Hence the shallow sponsons.
