Not sure what this means? "Running 20 Cell 11.1V 5400mAh 3S LiPo ", can you elaborate?

That will most likely need way more esc than the x-po 100.
I would run 4s. 6s with the 2300 is asking for problems.

Is that a max amps reading ? ...ie would you run it with a Hydra 120 ESC ?

Yes..those were peak amp readings .I am running the hi-model 200 amp that Steven here has rated at 125 amps max ( ) so I imagine any true 120+ amp controller would do fine.My cheapy hi-model comes out at about 140 deg and motor is about the same after running the boat fairly hard.
I will say that although a 120 amp Hydra would probably be fine I like to see a little redundancy in power systems and would suggest something just a little larger if available.

I had one of the HXT 120's in a hot liner glider and it cogged pretty badly with a Hacker B40 8s motor so I couldn't outright recommend it.

                        esc

I decided to run the hi model 200 from ose instead of the x power in my sv with the 8 xl from the response in this forum. I used the hi model 200 last weekend and it worked great. Of course you can't go wrong with the cc 120 . I haven't heard about the hextronic esc in boats yet but if you go that route let us know how it works .Good luck which ever way you go.

Being that the sv27 is a smaller boat, I think the Xpower should be adequate. The hex is a good ESC. Just waterproof and cool it. You may have to use a pistix depending on your radio. They do cog with 2 pole motors, but that is at low rpm's and when first starting. Running a brushless ESC at partial throttle in a boat is not recommended as they tend to heat up. I've used the hex and the only problem I had was programming thru the USB port let the smoke out. So my second one, I just programmed the LVC and it works great.

Is the issue the Ammo 2300 is too much motor for + Xpower 100 or is (6s 11.4 5400Mah) to much power/ battery for Xpower - I don't want anything to do bang that s the last thing on my mine

6S is probably too much for the xpower. It can only use 5S. The Ammo should work with the xpower ESC.
Specs for the Ammo 2300 are:
                              SPECS:
                              Motor Diameter: 1.42" (36mm)
                              Motor Length: 1.97" (50mm)
                              Shaft Diameter: 0.197" (5mm)
                              Shaft Length: 0.591" (15mm)
                              Kv Rating: 2300 rpm/volt
                              Weight: 8.3oz / 235gr
                              Input Voltage: 14.8-18.5V
                              Max. Constant Current: 60A
                              Max. Surge Current: 100A
                              No Load Current: 2.0A

Remember, Ammo motors are 4 or 6 pole...(read their site) but Fiego are 2...hope I am remembering correctly.

This make a big difference in amp draw.
