Try the prop that came with the boat, battery packs towards the rear, strut parallel, trim tabs up or right rear level with hull bottom using a ruler and sharpen everything that touches water. Check cable for problems, batteries fully charged.

how old are the batteries? What manufacturer? Is it running wet(Meaning a lot of hull in the water, it should be riding on the last 3-4 inches of the hull) Mines consistentley in the mid 40,s with little effort.

Doesn't appear tgo be running wet.Trim tabs are up from stern, strut seems parallel, batteries are only about 6 months old not sure what kind bought them at Great Hobbies our local shop. All it says on them is Great Hobbies Premium G3 lithium power 35 C 5000 Mah 2 cell 7.4V.Use the same kind in my lobster boats and the guys at the Hobby shop use the same kind in there R/C boats. Will try the stock prop and full charge batteries tomorrow. Thanks for the info will keep trying to get speed up.

Make sure the trim on the throttle is set right, might not be getting full throttle, Aquacraft esc seem to be especially picky about trim settings.
A few outings ago I thought something was wrong with my Motley crew, I pulled the RX out of another boat that morning, did the rebind but forgot to reset the trim from where it was for my Swordfish esc. Wasn't getting full throttle.
How big a lobster boat? I just finished a 30" hull, not sure what I want to power it with yet, can fit a 45mm 3 blade scale prop. I haven't bought a prop yet because I haven't decided on power.
Going to mount a gaff on the stern and use it for retrieval so I want slow speed and power.
Doing it the same as my uncles was, spent a lot of time on that boat when I was a teen. Fished the North Shore of N.B. - Bay of Chaleur area.
This one is 1/12 scale, his was 30'
If my boats upside down then who owns the one I thought I was driving the last two laps?

Set Throttle trim to 2 o'clock position then go through the procedure in the manual.

Works every time solid 38 mph with stock prop.

With the Grimm 45x 68 prop 40 + all day long. Has run 44.7 and 45.2.

The first day I ran my Revolt it was windy and a little chop on the water and with the 45x 68 prop it ran 45. something I would have to look. But every time after that the water is glass smooth and most is 43.0 mph solid with 45x68 and same day after three runs I switched to the stock prop and ran 38 or 5 mph slower. I do have 5.5 connectors battery to ESC and stock 4 from ESC to motor. see my gallery.
I wish I ran on a smooth water day first HA

How much timing does that 120 send to the motor?

It was 10° with the stock Aquacaft ESC.
