I've been informed that 6.75" from the transom is good...however since I was planning to run in the offshore class(N2), methinks that I will not be able to test that

Good choice
Now that's a good coice for 2s offshore, I drove Randy's at 1/3 ahead of the transom (cg)
They tend to like a high strut, it eliminates porpoising
