what class would a 25" prince mono run it with sv motor and esc?

It would run with P-Monos, (you would find that embarrassing)unless you have a P-Spec class.

Unofficially, depending on the club you belong to or race with, LSO... Limited Spec Offshore, which some are calling LSSO... The NAMBA rules say you have to run a 700 motor in this class, but most clubs have abandoned that and are using some form of "P-Spec" rule that allows the SV27 or BJ26 (and some the UL-1) motors...Darin E. I meant to say SV27 or BJ26 MOTORs... it whatever hull...
Some clubs have a "Spec SV27" class... that's only SV27s... Some have a RTR class... I think that includes SV27s, BJ26s, etc...
You'll just need to check with your local club to see what they have for "club" classes that it would fit into...
