BTW you can look at this Peakeff you'll see that the efficiency remains pretty good above 60A but thermal dissipation increases quickely! pure theory though!

I do run an Etti 150 race with the extra caps in a MHZ lizard Xtreme running KB45 8XL on 6s 4500 mah 25c batt ABC H5 prop (45mm) and it hardly brakes a sweat

As everybody already mentioned you started with a huge prop. Your boat is much heavier than the SV27 hence more amps. Here is what I propose:
Etti 2-7s 150 Amps
11XL on 6s and better 6s2p
Start with 42mm prop. and if everything is cool go to 43-45mm. Centre of gravity about 30% from transom. If posting some pictures of your boat (inside and transom) will help to identify if there is something else. Thank you ED66677 and Klaus for explaining motor Amp rating and your advices. The Peakeff is very useful and help me to understand some things.
Thanks to EDPOWER for link to extra caps bank, it seems to be very interesting, even if we don't know if the ESC's general values change or not with extra banks, the explanations are a little bit indefinite. But I'm interested in that as my goal is to run the faster.
And thanks to DISAR, I'm going to order the ETTI ESC you have talked about, but I will start with smaller props than 42mm : I'm afraid of frying my ESC again, lol.
I live far of USA, in a Pacific Island, so once I receive the new ESC, I'tell you about my firts tries. But I will post some pictures of my boat to have your advices.Comment

Your first mistake was believeing everything you see and read on YouTube. Many of the "setups" posted there are only good for a short time before something burns up - or else are entirely made up by the poster. Believe me, the setup you quoted would not last long - either the boat would be upside down, or burned up. And your 32" mono is larger and heavier than the SV27 - that makes a difference.
Next, IME very very few ESCs can actually handle the amperage they are supposed to - including the Castles. The cheaper chinese ESCS are the worst, many of them can't handle half the quoted amperage. Check with the members here if the ESC you are interested in is worth buying. BTW the Aquacraft ESCs seem to handle their rated amperage just fine - but they are limited to 4S for reliability.
The prop you used is really too large for that hull anyway. My 33" mono runs 50 mph in racing trim with a 45mm prop, and just 2 mph slower with a 42mm prop. Never never never start your tuning with a large prop!

remember when you try it next time, go for a 30s run and come back to the shore, check motor, batt and ESC temp, we've seen some setup that did not even resist 30s!
if temps are ok go for another minute and check again...Comment

Happy to know that you were living in Tahiti Adrian, we can say that Tahiti and New Caledonia are similar isles.
