Good you posted the video that shows quite a bit. That prop is not working well, too much lift as you noted causing the tail to hop. That's a double ding for efficiency. Instead of pushing forward its spending too much energy lifting the tail. Second, the hopping changes the angle of attack on the front sponsons and causes the rears to make and break contact with the water. That also sucks power out. You need to get the prop/strut/AoA/turnfin correct so that on smooth water there is no bounce or chatter in the boat. Try 1616,1716, 1717 10-39 or 17-15 ABC prop.
You want to strive for this level of smoothness:
This is a JAE mini sprint 3S 2500mAh boat with an outrunner motor. It's butter smooth and current draw is very reasonable.

The Mini Sprint speed looks similar to mine unfortunately I never had good enough water to open it up and complete a run at the SAWs while i had it and it was too small for a GPS at the time, but based on looks and laptimes I think it was likely in the low 50s. Mine ran a mega 16/15/2 4200kv (28x35), on 3s 20c 1700mAh, with an uncooled castle ice lite50, spinning a detongued x432 at about 300W. This was a 6 lap sprint setup, using an old 5min 2s endurance race setup on 3s.Paul Upton-Taylor, Greased Weasel Racing.Comment

I should add a PS:
NAMBA runs 6 lap electric races. The only change is that everyone launches at the 30 second mark or waits on the water for a 30 second to the start signal. Boats then complete a lap to the start. Most still have enough battery to run a penalty lap if needed.
