I dont understand the question? If it's an ESC rated for up to 7 cells voltage, then what is the concern with using 6S?

If you are asking if you can use 7S on an ESC rated for 6S, then NO. Well, maybe once

That's what the voltage ratings for the components are there for, and should not require further explanation

Manufacturers designer equipment to exceed their rated specs. So it would be nice to spend $50 instead of $200

If the OP means running 7 cells on a 6-cell ESC, he should go for it. He can have four burned-out ESCs for the price of one appropriate working ESC. It is naive to think that all makers of ESCs build an extra 4.2 volts of headroom in their products.

Low price, reliability, performance - choose any two.

i use the OSE raider (it's a modified flycolor) and it's a good esc and can handle a TP 4060 but on 7s you get a early 4th of july with lots of sparks and magic smoke
