Just allow it to zero on the self centering stick. You cannot turn off the reverse function. You have got it all correct.
For me, I also use sticks, and I just push the throttle stick with my thumb rather than have my thumb on top of it. That way I never go in reverse anyway. Some of our clubbies who use sticks also run gas boats so they use a non centering stick. I think they set the neutral position with stick fully back.

Peter - I'm going to paste your response over in the Electronics/ESC forum. Your answer was posted while I was moving the post. To avoid confusion or losing track here's the question I will be asking you over there. I think you were saying that when you calibrate the throttle you give it full throttle for the max and allow the self centered position to be the minimum as compared to pulling the stick all the way back to what we would normally call the minimum towards the bottom of the transmitter.
