Pretty sure hes talking about the sponsons when he says wings. Just a guess but I think when he went to thinner sponsons it shifted the CG forward . I don't think the sponsons are big enough, they are partially submerged before he hits the trigger and when he does its submarining the boat. As for turning right is the torque of the prop causing that or rudder not set correctly or are the sponsons not square to the hull of the boat.
