What batteries and parameters are performing the best in P mono/class boats? Thanks in advance.

Two different schools of thought here....
One is to keep the boat light with just enough mAh to complete your laps, in order to keep your boat quick and agile.
The other is to run the maximum allowed mAh in the rulebook, to not only keep the voltage up higher (therefore keeping top speed up) and give the boat some mass to handle race water.
Personally, I lean towards the later, and run 10,000 mAh worth of battery in all but one of my P boats.
