I have an 1/8 scale ML Boatworks hydroplane and a leopard LBP5692-1090KV motor. I am brand new to this and could use some advice on batteries, esc , ect.. looking for dependable and of course fast ! Any advice is appreciated

Pretty simple answer, look at the spec sheet for the motor. It lists 160A max current draw.
You can use a 160A or with some headroom a 180A.
Check the store for some models. With such a low kV motor you need minimum 8S, in my opinion.
Seaking 180 is only 6S, not recommended.
Anything above 6S and 160A will work just fine. Make sure it has a BEC or get a standalone if it's not available.
Batteries: you will need 2x4S Lipo with minimum 5000mAh preferably 6-7000mAh but depends on what you want i.e. race or fun.
CNHL (ChinaHobbyLine), Yowoo, GensAce or SMC are good choices. Minimum of 60C on those brands (SMC minimum 20C on the real spec ones)
For just fun, Zeee (Amazon) are my go to and work well, pick the 80 or 100C.
Make sure you have connectors that can handle it, 6.5mm bullets minimum, OS8 in my choice.
EC5 or lower will most likely melt off during the runs.
