Just to be clear, the SF throttle endpoint trick starts with calibrating the ESC to a 100% endpoint setting on the Tx, then, crank up the end point and run the ESC as is. It's like going to 11, it's one higher than 10.

Here is some data from my last run, only difference is a tried a Prather 235 on it this time.

A charged 8S battery should be producing about 42-44kRPM with that propeller. So with reasonable slip you should be around 75-80mph.

So the problem I easily see if that your cells have massive voltage sag under load. You are dropping below 24V for an 8 cell pack, i.e. less than 3V per cell. A good battery should drop to 3.5-3.7V/cell under a 300A load like this.
Loaded KV is dropping from 1644 to 1426 at 220A which is OK.
        You are seeing 100% throttle.
        ESC is not overheating.

Do you have a low voltage cut-off set?

I found a comparable set of data from my S-Hydro.
The cursor is at a 220A point and notice the battery voltage is at 27V compared to your 24. That may not sound like much, but it's significant. These are older cells 5100mAh cells in an 8S1P configuration.

I have the low voltage cut-off turned down as far as it will go to 2.5 volts

What specific battery connectors are you using? 5.5mm/6mm/6.5mm-8mm?

6.5 castle on the motor y'd into 8mm going into ESC and 8mm on batteries. I am going to get the brass bars from Lehner for the motor side to eliminate the Y's I made. I just did these in a pinch for the Shootout this weekend.

I have those Delta bars in case you have not ordered them from LMT yet. The Castle 6.5mm are decent connectors especially in parallel to make your delta connection on the motor, but for a 1P battery connection they are a weak point.

Turn off lvc completely..you are going into low voltage protection.
