currently running a 36' avenger with twin 4082 1600 on 5s. runs well in low 70's. considering switching power to my tp 5670 800kv on 10s. will that be too much power. would be running 2 5s 5000mah and maybe add 2 more for 10,000 mah. comments?

At the same amp draw both setups will deliver ~equal power. 200 amps on 18.5 volts times two is 7400 watts gross, the same as 37 volts times 200 amps. The single bigger prop will be more efficient than two little ones, but the drag required to overcome prop walk may level the field. Twins are faster than singles when using the same voltage for both, in the OP’s case it is about a wash.

Nothing wrong with twins, but either twins or singles need proper setup to run best. With my 32” single 6S cat I made passes into the 90s at SAW events, fast and stable - on smooth water. But for SAW runs twins are faster because they offer more power, not stability. They sound so cool too!
