Timing setting

I have a Leopard 4082 1600 KV and a 180 Hobbywing esc this is in a Midwest lobster Boat any idea what the timing should be set at to get the maxium speed???

That is a y wind motor, 10 - 15 degrees

Thanks for the reply speed now is 23mph last year I was using an Aquacraft 36/56 1800 kv 60 amp esc speed was about the same but things were getting hot with the setup I have now everything is running cool..I know with the set up I have now I have more weight I tryed 14 Volt and 22 volt speed was about the same going to charge the batteries and change the timing setting.Will post speed when I try it later wind has come up so will have to wait untill its calmer.Thanks again for the info. How do you tell what wind the motors are I have a few Aquacraft 36/56 1750 kv or 1800 kv?
