I took the three extra caps off of a bad t180a esc and they look good ( not puffed) and was wondering if I could put them on a t120 esc?
what would this do?
good idea or bad, what would the results be?

Well, I wish my seaking 120 ESC had more cap capacity.... I burned my caps on a fairly low draw 4S1P OPC tunnel setup on a x442 prop, aquacraft 2030kv motor, 4min run. The stock 60A Aquacraft esc works fine, so I'm pretty dissapointed that the 120 did not hold up. Disclaimer-- I did shorten the aquacraft ESC leads per Fluid's advice, so perhaps that would have helped the seaking...

Whats the benafits of extra caps?

They store a charge and help during very high current draw (i.e. motor startup). I swear by that Aquacraft 60amp ESC. I'm still using my original ESC from the UL-1 I purchased 3 years ago~! I blew the original cap and added (2) caps in parallel, but ever since, it's been flawless.....and I haven't been easy on it.

Knock wood, my AQ60A ESC is still going strong. I too blew the original cap (I had an early production controller with the small cap).
