Where should the COG be on a 30 inch cat?

The exact CG will depend on the hull shape, weight and speed. My MeanMachine runs best in the mid-40s with the CG @ 30%. Running at 55+ it is best at 32%. You are correct, dry assemble everything first, and allow room to move the packs to get the CG you want. Adding a few ounces of lead never hurt anything either.
