Hahaha...oh ok. Gotta do those sometimes.

OP: I think you're going to want to run that motor at very low timing..something like 5deg, or whatever setting your ESC has that's closest to zero. That's not a typical RPM for a boat to run though...actually it's not typical to run in a car either unless you are making speed passes. I'm interested to see what the application is...I have a similar setup in one of my 1/8 scale road cars.

                mate runs a 1415 1y (2200kv) in 1/8 serpent on 6s. Retains 2 speed very nice car.
Have to agree with Keith closer to 0 the better. being a 2700kv must make it a 1.5D

That motor is simply not safe on 6S unless the OP intends on pure SAW runs, ten - fifteen seconds than back to the bank to cool off. I ran a 1515/1Y (2200 Kv) on 6S for my SAW record and was turning 39,500 rpm on the water. A 2700 Kv motor would be turning close to 10,000 more rpm, hard to get a small prop to hook up at that speed. Amp draw could be massive, and the ESC and packs are at risk. I'm sorry, but if the OP has to ask such a basic question he has no business running that setup.

I too ran that motor for a 6S SAW record and would not recommend it. Lots of amps and very easy to overprop and pull lots of amps, i.e. 420+

                      That's already a hot 4S motor let alone 6S.
