Tony... the pair in the lower left look to be B80 cooling plates. I was going to fab up some from copper plate this weekend. The trick is getting the controller side thick enough to support the controller properly.

Tony, that would have the same issues as any other two ESC's
it splits the PWM and has two IC's (this is all an "i'm pretty sure") that each read the back EMF from either motor and adjusts accordingly, probably with a piece of code tieing the two motors together but allowing a little freeplay, so it wouldn't change an issue of not letting them work together, then again, it's your 160$.
