So both the brushless motor i bought and the esc have water cooling jackets. Ive seen boats where the tube plugs into the rutter and then there is a hole in the hull. Which one is the intake? There are no obvious in and out markings on the motor and esc. Does it matter which tubes i hook up to which ends?

Makes no difference just try to keep the amount of tubing to a minimum to reduce resistance and cool the esc first and then the motor. Make sure you check the flow of water to ensure there is a steady stream. -
I liked the days when i used to race 27MHz 1/10 rc touring cars on a World Competitive Level, with DC motors and the best thing to hit the bench besides Surikarn was GP Ni-MH and how much you were going to 'cook' them before a final .
Leaving the scence before AC motors and Li-Po became the norm, suddenly Watts, Amps and maths require one to THINK and then,..... post too much.
I knew i should of done level 3 maths insted of wood work and metal work !!But hey, im looking, learning reading. Seems so far just like the car days, he who has the most money wins. I would like to try my 'luck' at the pond one day on a competitive level for fun. But when i still need to learn about high currents and electronics beyond TX and RX, the envy to wanting more power, and about the justified money to play with bigger toy boats, i think i best keep reading looking and learning before posting. thnkx.
