ESC capabilties

What is the minimum amp esc to use for 5s lipo, will 60amp handle it? What would be a good brand to look for?

Depends on motor, prop, boat weight etc......all of that contributes to amp draw.

I have a Venom EKOS P1 2000kv outrunner with a 60amp water cooled esc running an Octura x640. I will search the forums further

5S, 2000kv, x640, I would go for 120Amp ESC min....
But, it may not be strong enough for your 60 inch V hull boat.....
