what is the best 2 part epoxy to use for mounting things (motor mounts, battery trays etc) to the inside of a fiberglass hull?

Those are the two I use, System3 is a bit easier to use as it mixes at a 1:1 ratio and comes in squeeze bottles, I use west for laminating, lay ups, actually any time I need a bit more than a squeeze.
If my boats upside down then who owns the one I thought I was driving the last two laps?

For mounting stuff (motor and servo mounts) I use JB Weld. I also lay down some masking tape down along the edges of the mounts before applying the epoxy. I pull it up after the epoxy sets for an hour for a nice clean installation.

Anyone can glue parts together with a few tips. The guys that scratch build boats and make their own plugs are the real craftsmen in this hobby!!!

West is the best. I like to use 406 colloidal silica as a filler.

Ive had great luck using Z-Poxy 30 minute for for motor mounts. Its cheap and it works good. For mounts that only support the front of the motor(no rear support),I cut up some fiberglass cloth into very small shards and mix it in for extra strength. Ive never had any kind of mount fail using Z-Poxy. I know West System is the best, but its also costly. Use what you can afford is my opinion.

ya its not inexpesive, but for the small amount that i use its not to bad. I use a little digital scale and weigh out small amounts.
