    Carbon

I would use 2 layers of carbon 2x2 twill and have them laid opposite to each other.

One layer on it's own won't make enough strength.

The motormount itself could add enough strenght to the tunnel, if glued in the right way.
Did you just glue it, or did you also secure it with a (or more) layer(s) of cloth ?

Another option : make the motormount longer or/and wider !
On a real bad-ass boat I once made for a customer, I made the motormount as wide as the tunnel.
I would agree that is will not add strength. I never stated it would be stronger. As I understood he wanted to make it stiffer. The same thickness of carbon will be stiffer than glass. I did not say it would be stronger just stiffer. One could argue that stiffer is more brittle but it will be stiffer. A better way is to design a tube or hump to add stiffness.

        I agree.

I never understood the "USA motormounts" , the small aluminium bend angles.
Most of the times even smaller than the motor itself !!
Simple carbon tube over the lenght of the tunnel, and the DIY wide motormount on top it, that will do the job. IMO

Look at forescott's picture : they should have extended the ply pieces and t-bar onto where the motor is, and enlarge the t-bar, and use it as a motormount

Aha, an H&M hull. That explains a lot :-)
Look what I did to my H&M to make it stiffer/stronger/S.O.B-proof :
