Getting back into rc after 50 years! Help

The last rc boat I had was back in 1965-pretty primitive stuff back then.
I am currently embarked on the building of a 1/12th shovelnose hydro "Miss Notre Dame" U-7 1969. Downloaded and printed blueprints from Astec models.
Now for the questions-make it simple to understand for an older guy please.

1-The plans are designed for a "speed 700" engine which seems to me like old technology although it would probably be fine, however the new brushless motors and new ESC's would put the 700 to shame.
What is the difference between an "inrunner " and an "outrunner" motor?

2-What would you guys recommend to replace the Speed 700 that would give good performance? I have no idea what the 700 motor would produce in MPH.
I'm not out to break any speed records but would like a nicely performing boat. Better to have more go power on tap if you need it. I do plan on water cooling
    both the motor and ESC.

3-What about a recommendation for an ESC along with your motor recommendation?

4-Not looking to spend huge money out of the starting gate-that will come later if this first boat pans out. It will be a complete learning experience, almost starting
from scratch. I have to forget what used to be and get with the program currently.
Just want decent equipment-not cheap stuff-and not top of the line.
    Thanks in Advance
    Paul

Unless you have all the equipment to run a brushed system, research this site and do spec brushless power. You will be much more satisfied in the long run. I think Steve has a brushless system where you can get an Aquacraft or Proboat motor and esc for about what you would pay for old school stuff and enjoy considerable more power, efficiency and longevity than brushed.
Boats don't win races, drivers do.

The big questions, speed. duration of run, radio, charger and budget? An RTR may be a better choice, but be aware there are some dubious rtr boats out there.

I have a similar hydro. I used an Ammo 2300 with a 70 amp hacker Master on 4S.
