Just use a piece of Aluminum, drill holes and bent it to suit, usually 10 to 15 degrees bend should be good.
1/16" thick aluminum will do. To get a drill pattern for holes you could use a piece of paper and puncture the paper with the drive shaft.
Then take a pencil on its side and use the lead to shade the paper over top the screw holes.
This will give you a template to tape down & drill with, Start with motor mount holes, then the center hole for shaft. Doesn't have to be perfect for a 2040 motor that weighs maybe 28grams or so...
If you bought a water cooling aluminum can from HOR or elsewhere on ebay, it may then have correct diameter to bolt right back into the existing motor mount.
i have the hor racing motor and cooler in several pro boat mini v boats
and just bolted back into the stock mount position, they work fine
however i just got a new fibreglass hull that is about the same size and shape of the mini v, that has no mount whatsoever so i need to build a new one
