Making a "SLOWTech" for my daughter, motor/ESC choice?

Hi Everyone!

I know this is a FE forum and most people don't usually want their boat to go slower, but my 7 year old daughter has decided she wants her own first boat now. She specifically said she doesn't want it to go "super" fast because she is still learning how to drive. She is also very specific as to what she wants the boat to look like.

I have our FASTech hull that suffered a crash a few months ago. I have since patched the holes in the hull. I would be running 2s at first with option to go to 3s. I have all the hardware for the hull still on the boat so all I need is a motor/ESC that will give me decent run times with speeds in the low to mid 20's on 2s. I'd like to keep it under $60 if possible but I don't think that will cut it.
My thoughts were:
Turnigy Marine 60A ESC
Feigao 540s 12S 3,180 RPM/Volt 5mm Shaft

Any suggestions?

She wants it painted Fuchsia with Barbie decals. Has already picked out some Polly Pocket dolls to ride in the boat.
This should be interesting to say the least!

Do you have the stock motor? That's what I put in my daughters boat and run it on 2s.

No, I picked up a used hull and swapped out the stock motor ESC. Never tried running it on 2s, infact I didn't even know you could! haha.
Stock ESC as well?

No. It was a SV27 controller with the Pro Boat 1500 motor. El Lobo II on 2s with a x442.
