Stinger help needed

I have a stinger strut and was wondering if I need to put the stuffing tube all the way in against the bearing for the prop shaft or not?

Nope. Put it maybe 1" in the stinger or less if needed. I think I would consider stopping the brass at the hull and then using teflon to go in. This makes it easier to adjust but depends on the stinger.
