Need Help on a FE Tunnel Build!

Need help on my first FE Tunnel Hull Build. I want to put one together to run the "P" spec class at the World Tunnel Championship. I have a hull and lower leg just need help with the electric part. I'm thinking of keeping it simple and going with all Aquacraft. Will the Aquacraft 60amp ESC handle running their 36-56-2030 motor? If so what size Lipo batteries do I need? Any help would be great.

I would go either the UL-1 speedy (60 amp) or the Turnigy (120amp and cheaper)
Batteries, minmum 4000MaH but I would maybe go 5000

What hull and lower?

I will be running either a Hydro&Marine F1 Skater or a Lee Craft XTR-21. The lower is a Hyper Performance bullet drive. The rules I have on the class say you can run either the Aquacraft 45 or 60 amp ESC or the Pro Boat 45 amp ESC.
