Just thinking out loud here ... can two 120 amp ESC's be connected in parallel to make a 240 amp ESC? Has anyone tried it? I did a search but found nothing.
No, it's not that simple. With two hooked up to the same motor, they would fight over which one ran the motor. I suspect they'd last less than a minute and would not run the boat. If you can wire the power boards together with a single control board, then perhaps.

Thats a no Chuck. The one thing to keep in mind is the limit of the individual ESC, they might be paralleled but they will still only take their individually rated amperage before blowing.

No can do. The ESC not only provides voltage/current to the appropriate windings with the appropriate frequency and pulse width, they must also read the back EMF to determine speed and rotation. In addition, they would need to be triggered simultaneously. Plus...depending on the output design, they may not like the "bridging" of circuits and end up with a catastrophic failure of monumental proportions.
