I personally have not but if any ESC is pushed beyond its given values.............

It really is not enough info on what kind of ESC we are talking about.

Chieh, as tth mentioned, what hull, what prop, what is a basic 3S X 2 Li-PO and as tth mentioned what ESC??
You will blow any ESC if you exceed their stated specifications and even then reduce those specifications by 30% and that is important for cheap Chinese ESC'S. Look at some of the build threads

I don't own a Formula Fastech, but the owner's manual clearly states that 21 volts is the maximum input voltage for the ESC. Running two 3S packs in series will greatly overvolt the ESC (25.2 volts), and I can imagine the ESC would be damaged or eventually destroyed. Running the 3S packs in parallel may not supply enough voltage to turn the ESC on. 12 NiMH cells in series is the recommended battery power.

              There is also this warning:

Caution: It is imperative that you do not attempt to use LiPo batteries in the Formula Fastech 26 Brushless unless it has been
properly programmed or serious damage to the batteries and electronics may occur.

2 x 3S is too much for that system. w/ Nimhs, 2 x 7cell packs will likely be okay, but performance mitigated by the extra weight. 2 x 2s LiPo packs is probably the best option for stock ESC and motor. I don't own one either...apparently you'll need to program the ESC for Lipo...?
