Anyone on here know how to increase the throw on a servo?

If you have a digital radio transmitter, most can increase the end point adjustments up to 120%.

Some digital servos are also programmable and offer travel adjustments.

Whether either type of servo throw will give you the extra rudder movement you are likely looking for though is questionable, as pushrod travel reduces exponentially with higher angles of travel which is why most servos stop at 60degrees as standard, so although it is not what you asked you may need to increase the length of the servo arm or decrease the length of the rudder arm to get extra rudder travel.
