Swordfish X+ 200A ESC with Data Logging : 2s-8s lipo

I am going to use two of these in a twin 6S Cat

Extra Caps -- What size, voltage, and how many on each should I use??

My Max Amp draw should be 150a to 180A on my planed setup.

Does your data log provide ripple voltage?
You want to bring that below 10% of the applied voltage. 5% if you want to be highly diligent.
Anything lower is wasted effort. You might already be there.

For a good start, you want caps in parallel for ~ 5000uF as a start. In the RC track world, they are typically in the 5000-9000uF range.
You have to have extreme short leads and use low ESR caps.

I doubt you will need any tbh. There is a lot of snakeoil in those cap packs.
