So I took my ESC , that went swimming, apart. Here is what it is made of.
24 - 4833N FET's (8 for each phase).
30 Volt each
26 amps @ 80*F = 26x8=208 amps cont.
19 amps @ 200*F = 19x8=152 amps cont.
It is very well made. It has a metal plate attached to each bank of 7 FETs and the PCB. So it cools the FETs and the board.
I am not an expert AT ALL, but they seem to be conservative on the rating of the ESC.
Maybe someone with a lot more knowledge can give some insight.
Here are some specs for the FETs used in the Mamba Monster Max, I believe.

36 - 4108N FETs (12 for each phase)
30 Volt each
22 amps @ 80*F = 12x22=264 amps cont.
16 amps @ 200*F = 12x16=192 amps cont.
