Last night I rolled my Ms Geico after hitting another boat and hatch and liner came off - it would have sunk if it wasn't for the floatation foam. The inside, including my (non-hardcase) lipos, was completely submerged for about 30 minutes before I could retreive it. I'm new to lipos and was wondering if this would kill them or what to watch for if I try to re-charge them after they dry out for a few days ?

To make sure that they dry without corrosion, remove the shrink wrap and blow out as much water as possible. Carefully cut a part of the wrap and peel it off with care - it looks harder than it is, just be careful not to damage the cells. After all is dry, re-shrink wrap them and all should be good after checkng balance, etc. If you sunk in salt water, then all bets are off.
