You measure the output from the battery to the ESC. You can measure the total input to the ESC from the batteries if you have a large enough current sensor. Our outboard hydro ran seven packs in parallel with those sets of packs wired in series. The output at the motor was 133 volts nominal with around 700 to 900 amps. We measured the current and voltage from the output one pack on each side of the boat with two Eagle Tree loggers. They were in close agreement and we felt confident in multiplying the current and voltage from one battery to find the totals.
