Hi Al, welcome to the wonderful world of building.
For anyone to provide helpful input, we need to know what your planned set up will be.
In general the strut depth depends on several things:
How much lift is built into the hull,
Prop size, typically smaller with higher rpm systems
    Typical water conditions
Speed / driving style (drag racing, oval racing or fun running)

Mine is set up for oval racing, moderate rpm, 50mm prop and I have mine 15mm (keel to shaft center).
I also did a wet well which allows me 1cm up down adjustment (with or without angle change) in addition to angle changes with no depth change. This is not mandatory, but since I did not know how much lift was built into the hull, I wanted flexibility.

Share some details and we can help you get the performance you are after.
    Happy building!
