    Default rudder servo

does the rudder servo need to be mounted on the side or can it be mounted in the middle of the hull if there is room

As long as its mounted securely, it doesn't matter where its located.

You'll want to position it though so that your pushrod will need as little bending as possible to reach the rudder control arm form the servo arm.

A few of my steering setups use a flex cable for push pull. Set so that it is pulling when turning right.
This allows a lot of flexibility in servo placement and cable run.
For a single pushrod it is preferable to have it so that it pulls to turn right too.
On my tunnel I have dual pushrods setup in a push/pull config.
I have used fine wire in a p/p setup too.

    So to answer your question.
If you can put your servo anywhere you want, then get it close to the rudder and have the shortest straightest rod to it.
The other methods I have above will give you unlimited options.
